Anytime Egg Fajitas
2 tablespoons vegetable oil
2 cups frozen hash browns
1/2 pound spicy bulk sausage
5 eggs
1/2 cup green bell pepper, chopped
1/4 onion, chopped
1 cup cheddar cheese, shredded
8 large flour tortillas
Heat oil in a large skillet. Add hash browns and
cook over medium heat, stirring constantly until lightly browned.
Add sausage and stir frequently until sausage is thoroughly cooked.
Beat eggs in a small bowl and add to hash brown mixture along with
green pepper and onion. Cook, stirring occasionally, until eggs
are set and thoroughly cooked. Microwave tortillas on high for
25 - 30 seconds to soften. Spoon egg mixture onto center of
softened tortillas and top with cheese. Roll up tortillas.
